Homemade granola

Serves: 3 cups | Prep Time: 5 minutes  |  Cook Time: 20 - 30 minutes

Ingredients

  • 3 cups rolled oats (certified gluten-free if desired)
  • 1/4 cup coconut oil, melted
  • 1/3 cup honey or pure maple syrup
  • 1/2 tsp. cinnamon
  • 1-2 tsp. vanilla extract
  • Pinch of salt

Optional add-ins (½ - 1 cup):

  • Nuts and seeds
  • Dried fruit (mix in after baking)
  • Coconut
  • Chocolate (mix in after baking)

Directions

  1. Preheat oven to 300 degrees.
  2. In a large bowl, add the rolled oats, coconut oil, honey, cinnamon, vanilla, and salt; mix well until thoroughly combined.
    • If adding nuts, seeds, coconut, or any mix-ins you want to bake with the oats, add them now, stirring to combine, and add 1-2 tbsp. more honey if needed.
  3. Line a baking sheet with parchment paper. Spread the granola mixture evenly and bake for 20 to 30 minutes, stirring halfway through or every 10 minutes. Granola should be a light golden brown.
  4. Let the granola cool completely, then store it in an airtight container for up to 2 weeks.
    • Add any final mix-ins to the granola, like dried fruit or chocolate, once it has cooled completely, and store in an airtight container for up to 2 weeks.
